I know many of you are going to holiday parties or hosting parties of your own so I am hoping these recipes may be helpful. One of my sisters sent me these recipes a couple of weeks ago when I hosted a happy hour and they were great. First Tortilla Roll-ups- great because you can make them beforehand and they are more substantial that other apps if you need to actually eat something yourself while you are prepping! Another is Warm Bleu Cheese, Bacon and Garlic Dip- I haven’t made it but it sounds delicious! Last, Smoked Cheese Squares- this is definitely for a cheese lover- my mom told me these are FANTASTIC! Recipe below:
2 medium onions,thinly sliced
1 Tbsp. butter or margarine
1 Tbsp. olive oil
1 Tbsp. brown sugar
1 Tbsp. balsamic vinegar
1/4 cup pitted whole dates, snipped
1/4 cup pine nuts or slivered almonds
1/2 cup shredded mozzarella cheese (2 oz.)
1/2 cup shredded smoked Gouda cheese (2 oz.)
1/2 cup shredded smoked cheddar cheese (2 oz.)
1 16-oz. Italian bread shell (Boboli)
Preheat oven to 450 F. In a large skillet cook onion in butter and oil over medium heat for 10 minutes, stirring occasionally. Stir in sugar, vinegar, and dates. Cook and stir 5 minutes more our until onions are golden brown. Remove from heat. Stir in nuts. In a bowl combine cheeses; sprinkle evenly over bread shell. Top with onion mixture Place bread shell on an ungreased baking sheet. Bake for 8 minutes or until cheese is melted. Let stand 5 minutes before cutting into 2-inch squares. Make about 30 appetizers.
