thai fried quinoa

My husband and I had a very unique date night last week- our boys were out to dinner with their Grammy and Grandpa and we had a chance to cook a meal we would like – together. I had just found a delicious sounding recipe on Iowa Girl Eats the day before, so it was perfect timing. While our little girl rocked in the bouncer next to us, we pulled off making Thai Fried Quinoa.  We really liked it, plus it was easy. A wonderful combination.
