comfort pasta

My neighbor Andrea served the tastiest pasta at playgroup and everyone went for seconds. Here is the sauce- serve over any pasta. I bought a rotisserie chicken and chopped it up to add at the end. She said this is a recipe she makes for new mom’s since you can make it ahead and freeze it. Andrea says it serves 8, but I say 6 since I end up wanting a lot of the sauce!

1/8 cup olive oil
2 onions diced
2 cloves garlic minced
2 cans Italian-style tomatoes, do not drain
2 tblsp basil leaves
1 1/2 tsp white sugar
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp ground black pepper
1 cup heavy cream
2 tblsp butter
 
In a saucepan, saute onion & garlic in olive oil over medium heat.  Add tomatoes, basil, sugar, oregano, salt & pepper.  Bring to a boil & continue to boil until most of the liquid evaporate.  Remove from heat, stir in whipping cream & butter. Reduce.  Add in meat.  Serve over pasta. 
 
Can be served with chicken or ground meat.

    I’ve made the pasta twice and really like it! I added mushrooms while i sauteed the onion and used fat free half and half. You have to cook the sauce after you add the half and half to make it a little thicker, but it’s worth it to lose the calories from the whipping cream. So good – thanks for the post!

    Suzanne – I made this last night for dinner and its delicious! I also substituted the heavy cream with 2% milk (and 1/2 the butter). Used your reco of chopped rotisserie chicken / picked up the lemon rotisserie chicken from Whole Foods. Really easy!
