matt’s guacamole

My brother-in-law Matt is a great cook. Anytime we are in the kitchen together, I find that I am a bit envious of what he has put together for his meal. So, it was no big surprise when Matt’s guacamole was the clear winner in a family “guac-off” two years ago. He has the credentials to make a good guacamole as he worked at a well-known Colorado restaurant called “Big City Burrito” while in college. His recipe is below- and if you really want to look like you know what you’re doing, leave the pit/s in the bowl to keep it fresh. (Matt does!)

For 2 avocados:

Peel and pit.

Mash with back of spoon with1 large or 2 smaller chopped garlic cloves. Keep it a little chunky.

Give it a healthy seasoning of salt (more than you would your scrambled eggs) and pepper (about half as much as salt).

Add a chopped and seeded Roma tomato.

Chop and add about ½ as much onion.

Finish with a squirt of lemon and lime.
