You can never have too many appetizer recipes, right?  Here are more recipes that I have received- why are making  appetizers so much more fun that planning dinner?

From Eileen:  MINI TOMATO BLT’S

Ingredients:  cherry tomotoes, lettuce, bacon, mayo (I like miracle whip), salt and pepper.
 
Cut top off cherry tomato, dig out seeds and juice (use small round fruit scooper…like you would use for mellon balls).  cook bacon and let cool, then break into little crumbly pieces.  chop lettuce into small pieces. fill cherry tomato with a little mayo, add bacon crumbles and lettuce into tomato (mayo should hold them in place). salt and pepper tomato.  Just pop in you mouth…..sooooooooo yummy!!!!
From Andrea: BACON WRAPPED DATES
 
10 slices of thick bacon
30 Whole, pitted dates
 
Preheat oven to 400 degrees.  Cut bacon strips into thirds. Wrap each date in a piece of bacon.  Place on a foil-lined rimmed cookie sheet, seam side down.  Bake for 15-20 minutes, or until bacon is cooked through and slightly crispy.
 
Consider stuffing date with an almond, or a piece of goat cheese or blue cheese.  (I can vouch that these are so incredible- my husband asks for these everytime we make apps!)
From Jill K: BREAD WITH OLIVES AND CHEESE
 
slice a baguette, thin on angle
spread pre-made olive tapenade on top
top with thinly sliced italian cheese like parmasan, asiago (fresh, not aged), or other white cheese
broil until melted, a bit brown
that’s it!

    Re the baguette – you can also spread with pesto sauce instead of the olive tapenade. Then proceed with the cheese, broil or not and top with a roasted red pepper to make it look pretty.
