cooking for a crowd

April 10, 2010

My friend Kristen shared this recipe with me- I am sucker for these dips! She wrote:

Here is my recipe for a Mexican layer dip that serves a bunch. Most layer dips I have had seem to have little flavor, but this one is packed with it. I got this from the Colonel’s wife when Mark was in the army; the platter was always scraped clean at Army football get-togethers. 🙂

Mexican Layer Dip for a Crowd

2 10oz cans of Frito brand bean dip

1 C. sour cream

½ C. light mayonnaise

1 envelope taco seasoning

8 oz. shredded Mexican cheese

2 C. chopped tomatoes

1 C.  chopped green onion

1 6oz can of chopped or sliced black olives

Your favorite corn chips

Spread the two cans of bean dip on a large serving platter. Mix together sour cream, mayonnaise, and taco seasoning. Spread this on top of bean dip. Top with the cheese, then the tomatoes, green onion, and olives. Scoop the dip right off the platter with your corn chips!
