dinner overlooking the mountains

We were invited to dinner last Friday with some friends and it was a fun escape since they have an absolutely amazing view of Longs Peak from their backyard. As we sat down to dinner, the sun set over the mountains and it actually looked unreal to us! Cindy made a really really yummy meal but the standout for me was the salad. I asked her for the recipe and she just sent it to me. Let me know what you think if you make it – it’s Bon Appetit’s Frisee Apple Salad with Dried Cherries and Walnuts.  * Note to playgroup- I will be wowing you with this on Wednesday!

*** Cindy wrote me this added bit: “So if you like the way I made the dressing, then just add 2-4 cloves of garlic.  I always use extra virgin olive oil.  I also use the food processer to blend the dressing so that it’s creamier. Plus it chops the shallots and garlic up better.  I used 1/2 cup of olive oil, 1/4 cup of apple cider vinegar.  Honey, salt and pepper to taste.”
