summer salad

My friend Rachel of Rachel Olsen Photography (she is so talented and you may recognize a fabulous five-year-old guitarist in the pictures on her site!) made an incredible yummy salad for our playgroup at the pool.  Now I am one to really really not like cottage cheese, so it was a big surprise to learn it was in there and I liked it.  Here is the recipe from the Simply Colorado cookbook.

Serves 10

Salad

10 oz spinach

pecans chopped 1/2 cup to 1 cup

12 oz. 1% cottage cheese, rinse and drain (be sure to drain it)

Dressing

1 cup plain non-fat yogurt

1/2 cup sugar

3 T. vinegar cider

1 tsp. dry mustard

1 T. horseradish

1/2 tsp. salt

sliced strawberries
