quick pan-fried chicken

My friend Hadley sent me this recipe for Quick Pan-Fried Chicken Breasts from Cooking Light– I have been meaning to make it!  Looks easy enough and gets me out of my basic grilled chicken rut.

    These are a regular in our house, I marinate them about 6 hours though not the 15 minutes.

    I also found this recipe while waiting in the dr’s office and it’s super easy and good.

    1 tablespoon vegetable oil
    4 skinless, boneless chicken breast halves
    2 cloves garlic, minced
    3/4 cup Pace® Picante Sauce
    1/4 cup orange juice
    1 tablespoon packed brown sugar

    Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet.

    Reduce the heat to medium. Add the garlic to the skillet and cook and stir for 1 minute. Stir the picante sauce, orange juice and brown sugar in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through. Serve the chicken and sauce with rice.
