curried coconut chicken

My friend Jill was telling me her kids liked curry so I thought I should try it with mine. I looked up an easy recipe for Curried Coconut Chicken and tried it last weekend. It was d.e.l.i.c.i.o.u.s. My husband and I were licking our plates afterwards! I put it over plain israeli couscous. My kids weren’t so crazy about it, but that’s not saying much. I will be making it again!

I made it yesterday and it was so good. Loved the tang of the tomatoes paired with the sweetness of the coconut milk. Two out of my four kids liked it too. Highly suggest trying the recipe.
