fresh corn and avocado salsa

The Pioneer Woman could run the world.  Her blog is truly amazing- covering all aspects of cooking, family life, homeschooling, romance- etc. I can get lost in it for hours!  Anytime I try one of her recipes, I am not disappointed!  Tomorrow I am making Fresh Corn and Avocado Salsa. I am going to make it ahead of time and serve it with some tortilla chips. I already believe it’s going to be a slam dunk but I will let you all know!

** UPDATE: I made this today. YUM! I could not find a hot pepper but I did get a jalapeno and that was enough heat for me! Some of you have asked if you should cook the corn first- no need. Takes about 15 minutes to make- you could make this an hour before company and be set.

    Avocado can oxidize when exposed to the air, and lemon juice helps, certainly. But a foolproof way to prevent browning is to soak the avocado, after it’s cut, in a water for just a few minutes, then drain and add to the dish. It will stay green and beautiful for hours. The recipe looks delish!

    I too am salivating! Might try to make this for a weekend BBQ we are attending!
