hadley’s pumpkin bread

My friend Hadley gave me this recipe about 8 years ago and it’s still my favorite pumpkin bread. Granted I add chocolate chips to it, but still!  The house smells great when you make it and I like the spices that give it someextra taste.

Pumpkin Bread (with or without chocolate chips!)- makes 2 loaves

grease and flour 2 bread pans

3 C. sugar

1 C. veggie oil

15 oz. can of pumpkin filling

mix these three ingredients together

Add 4 already beaten eggs to above mixture

Then, mix together:

3 and 1/2 C. flour, 2 tsp. baking soda, 2 tsp. salt, 1 tsp. baking powder, 1 tsp. all spice, 1 tsp. cinnamon, 1 tsp. nutmeg, 1/2 tsp. cloves

Add the second mixture alternately with 2/3 C. water to the first mixture.  Add chocolate chips if you would like- I used mini ones since I had them in my pantry.

Bake at 350 for about an hour or until toothpick comes out mostly dry. Just found this recipe online- firstone on google- must be popular! http://allrecipes.com/Recipe/downeast-maine-pumpkin-bread/detail.aspx – this one says makes 3 loaves but I used a standard bread pan and I would go with 2!
